How To Make Greek-Inspired Sheet Pan Chicken, Zucchini, Carrots and Tomato

  1. Cut zucchini, bell pepper, carrots, and onion. Transfer the vegetables and chicken thighs to a baking sheet.
  2. In a mixing cup, combine the avocado oil, diced garlic, oregano, thyme, black pepper, mustard, and lemon juice. Transfer the mixture to the baking sheet and stir with the vegetables and chicken thighs. Transfer to the oven and bake for 25-30 minutes at 400 degrees F.
  3. Remove from the oven, add the cherry tomatoes and feta cheese, and place back in the oven for another 7-10 minutes.

Ingredients
  

  • 1.5 LB chicken thighs
  • 1 LB. carrots
  • An orange bell pepper one
  • Half an onion
  • 1 cup cherry tomatoes
  • Two medium Zucchini
  • ¼ cup avocado oil sub for olive oil
  • 1 TBSP thyme
  • 2 TBSP oregano
  • 1 TBSP black pepper
  • Salt to taste
  • 4 cloves garlic
  • 1 TBSP Dijon mustard
  • 1 cup feta cheese
  • ¼ cup lemon juice

Instructions
 

  • Preheat the oven to 400 degrees F.
  • Cut zucchini, bell pepper, carrots, and onion and transfer them with the chicken thighs to an 18 x 13 baking sheet.
  • Combine the avocado oil, minced garlic, oregano, thyme, black pepper, mustard, and lemon juice in a mixing cup, transfer it to the baking sheet, and stir.
  • Place the baking sheet in the oven and bake at 400 degrees F for 25-30 minutes.
  • Remove it from the oven, add the cherry tomatoes and feta cheese, and put it back in for another 7-10 minutes.
  • Allow to cool and transfer to meal prep bowls, or serve and enjoy.
