Greek- inspired Sheet Pan Chicken

Ingredients:

  • 1.5 LB chicken thighs
  • 1 LB. carrots
  • An orange bell pepper (one)
  • Half an onion
  • 1 cup cherry tomatoes
  • Two medium Zucchini
  • ¼ cup avocado oil (sub for olive oil)
  • 1 tbsp thyme
  • 2 tbsp oregano
  • 1 tbsp black pepper
  • Salt to taste
  • 4 cloves garlic
  • 1 tbsp Dijon mustard
  • 1 cup feta cheese
  • ¼ cup lemon juice

Instructions:

  1. Preheat the oven to 400 degrees F.
  2. Cut zucchini, bell pepper, carrots, and onion and transfer them with the chicken thighs to an 18 x 13 baking sheet.
  3. Combine the avocado oil, minced garlic, oregano, thyme, black pepper, mustard, and lemon juice in a mixing cup, transfer it to the baking sheet, and stir.
  4. Place the baking sheet in the oven and bake at 400 degrees F for 25-30 minutes.
  5. Remove it from the oven, add the cherry tomatoes and feta cheese, and put it back in for another 7-10 minutes.
