Ingredients Needed For Ground Beef Vegetable Soup
- Ground Beef. An excellent protein source.
- Seasoning. Salt, black pepper, thyme, oregano, and cayenne pepper.
- Avocado oil.
- Potatoes.
- Mixed Vegetables.
- Beef broth.
- Diced tomatoes.
- Garlic.
- Tomato paste.
- Onion.
- Kale. Substitute with spinach.
- Bay leaves.
Instructions:
Step 1: Dice the onion and mince the garlic using a garlic press. Add the avocado oil to a pot and heat over medium heat; add the diced onion, minced garlic, thyme, salt, oregano, cayenne pepper, and black pepper and stir for 2 minutes. Transfer the ground beef to the pot and combine and cook for 5-7 minutes.
Step 2: Add the diced tomatoes, mixed vegetables, diced potatoes, tomato pasta, beef broth, and bay leaves, combine, and cook for 10 minutes on medium heat.
Step 3: Chop the kale, transfer it to the pot, and cook for another 5 minutes on low heat. Adjust seasonings to taste.
Step 4: Transfer to meal prep bowls or serve and enjoy!

- 2 TBSP thyme
- 1 TBSP Oregano
- 1 TBSP Cayenne pepper (optional)
- 2 TBSP black pepper
- Salt to taste
- 2 cups ground beef
- 1 cup diced tomatoes
- 2 cups mixed vegetables
- 2 cups diced potatoes
- 2 TBSP Tomato paste
- 4-5 cups beef broth
- 4 bay leaves
- 8 oz chopped kale
