  • Seasoning. I used Salt, black pepper, oregano, chili powder, chipotle seasoning, ground cumin, and smoked paprika.
  • Avocado oil contains anti-inflammatory and antioxidant properties. You can replace the avocado oil with olive oil.
  • Cherry tomatoes are a good source of vitamins A, C, and E. The cherry tomatoes can be substituted with Roma tomatoes.
  • Black beans: They are a great source of fiber and protein. Chickpeas is a good substitute for black beans.
  • Sour cream contains probiotics, which aid digestion. You can replace the sour cream with Greek Yogurt.
  • Avocado. Excellent source of fiber and vitamins C, E, and K.
  • Yellow bell pepper. Bell peppers are rich in antioxidants.
  • Orange bell pepper.
  • Red Onion. Help support a healthy immune system. You can substitute the red onion with the yellow onion.
  • Rice. You can replace the rice with quinoa.

How To Make

Heat some avocado oil in a nonstick pan. Add the ground turkey to the pan—season with cumin, chili powder, smoked paprika, salt, and black pepper. Add about 1 tbsp of tomato paste and stir. Cook for about 12 minutes or until fully cooked.

Add 2 cups of water and rinsed rice in a pot, bring to a boil, and cook for 15 minutes. Remove from the stove and leave for 10 minutes with the lid. Remove the lid and fluff with a fork.

Dice the cherry tomatoes, orange bell pepper, yellow bell pepper, and onion.

Ingredients
  

  • 1 LB ground turkey
  • 1 cup rice
  • 1 orange bell pepper
  • 1 yellow bell pepper
  • 2 medium Avocados
  • Half an onion
  • ½ cup sour cream
  • ¼ cup Avocado oil (sub for olive oil)
  • 2 cups canned black beans
  • 1 cup Cherry tomatoes
  • ½ cup lemon juice
  • 1 TBSP Chipotle seasoning
  • salt to taste
  • 2 TBSP black pepper
  • 2 TBSP chili powder
  • 2 TBSP ground cumin
  • 2 TBSP Oregano
  • 1 TBSP smoked paprika
  • 1 TBSP tomato paste
  • 0.5 oz fresh cilantro

Instructions
 

  • In a nonstick pan, drizzle some avocado or olive oil, heat over medium heat, and transfer the ground turkey to the pan. Season with ground cumin, chili powder, smoked paprika, salt, and black pepper. Add about 1 tbsp of tomato paste and stir. Cooke for about 12 minutes or until fully cooked.
  • Rinse the rice, add it to a pot with 2 cups of water over medium-high heat, and bring to a boil. Cook for 15 minutes. Remove from the stove and leave for 10 minutes with the lid. Remove the lid and fluff with a fork.
  • Dice the cherry tomatoes, orange bell pepper, yellow bell pepper, and onion.
  • To make the salad dressing, in four jars or bowls, add 1 tbsp avocado or olive oil, 2-3 tbsp lemon juice, 1/4 tsp ground cumin, 1/4 tsp chili powder, 1/4 tsp black pepper, salt to taste, and 1/2 tsp chipotle seasoning to each jar and stir.
  • To each jar, add 1/2 cup washed and drained canned black beans, 1/4 cup orange bell pepper, 1/4 cup yellow bell pepper, 1/4 cup cherry tomatoes, 1 tbsp onion, 1/2 cup cooked rice, 1/2 cup cooked ground turkey, 1 tbsp chopped cilantro.
  • When ready to eat, transfer the mixture to a bowl, add the avocado and sour cream, combine, and enjoy! The mixture can be stored in the fridge for up to five days.
