Ground Turkey Taco Salad
This is the perfect lunch idea. The best part about this salad is that it can be prepared in 30 minutes. I make it when I have little time but want to eat healthily. This is also great for meal prep, but if you are prepping it, please make sure not to add the dressing until you are ready to eat to prevent it from getting soggy.

- Spray a non-stick pan with about 1 tbsp avocado oil and heat over medium heat. Add the ground turkey, 2 tbsp taco seasoning, 1 tbsp smoked paprika, salt to taste, and tomato paste. Cook for 10-15 minutes or until the ground turkey is fully cooked. Allow to cool and transfer to a large salad bowl.
- Rinse and drain the black beans and corn and transfer them to the large salad bowl. Chop the lettuce and tomatoes. Dice the onion, jalapeno, and cilantro and transfer them to the salad bowl. Cut the avocado as well and add to the salad bowl.
- Add the remaining avocado oil, light mayo, lime juice, taco seasoning, smoked paprika, and sour cream and combine in a small bowl. Transfer to the salad bowl, stir, and enjoy.
