This is the perfect lunch idea. The best part about this salad is that it can be prepared in 30 minutes. I make it when I have little time but want to eat healthily. This is also great for meal prep, but if you are prepping it, please make sure not to add the dressing until you are ready to eat to prevent it from getting soggy.

How To Make Ground Turkey Taco Salad with Mayo Dressing

Heat avocado oil in a non-stick pan over medium heat. Add the ground turkey, taco seasoning, smoked paprika, salt, and tomato paste. Cook for 10-15 minutes or until the ground turkey is fully cooked.

Rinse and drain the black beans and corn and transfer them to the large salad bowl. Chop the lettuce and tomatoes. Dice the onion, jalapeno, cilantro, and avocado and transfer them to the salad bowl.

Combine avocado oil, smoked paprika, sour cream, mayo, lime juice, and taco seasoning in a small bowl. Transfer to the salad bowl, stir, and enjoy.

Ingredients
  

  • 1 cup black beans
  • 1 cup roasted corn
  • ¼ cup avocado oil
  • 2 TBSP tomato paste
  • 1 LB. Ground turkey
  • Half an onion
  • 3 TBSP light mayo
  • 3 TBSP taco seasoning
  • 2 TBSP smoked paprika
  • Salt to taste
  • 2 TBSP lime juice
  • 2 TBSP sour cream
  • Half-head iceberg lettuce
  • 1 jalapeno pepper
  • 1 medium avocado
  • 1 TBSP chopped cilantro
  • 3 tomatoes

Instructions
 

  • Spray a non-stick pan with about 1 tbsp avocado oil and heat over medium heat. Add the ground turkey, 2 tbsp taco seasoning, 1 tbsp smoked paprika, salt to taste, and tomato paste. Cook for 10-15 minutes or until the ground turkey is fully cooked. Allow to cool and transfer to a large salad bowl.
  • Rinse and drain the black beans and corn and transfer them to the large salad bowl. Chop the lettuce and tomatoes. Dice the onion, jalapeno, and cilantro and transfer them to the salad bowl. Cut the avocado as well and add to the salad bowl.
  • Add the remaining avocado oil, light mayo, lime juice, taco seasoning, smoked paprika, and sour cream and combine in a small bowl. Transfer to the salad bowl, stir, and enjoy.
