Lemon Steak and Vegetables

If you need an easy and healthy dinner that will be done in an hour, then this is the perfect meal for you. Everything comes together in one sheet pan, saving you time in the kitchen and less clean-up time. You just need to add everything to the sheet pan and bake for 40 minutes. This meal is also great for meal prep.

Ingredients:

  • 1.5 LB. beef
  • 1 LB. potatoes
  • One head cauliflower
  • 1 cup diced bell pepper
  • 1/2 cup diced onion
  • 1/4 cup oilve oil
  • 1/4 cup lemon juice
  • 3 tbsp minced garlic
  • 2 tbsp ground ginger
  • 2 tbsp black pepper
  • 1 tbsp crushed red pepper
  • 2 tbsp thyme
  • 1 tsp salt

Instructions:

  1. Preheat the oven to 400F.
  2. Prepare the ingredients by cutting the beef into thin cubes, the potatoes and cauliflower into bite-sized pieces, and the bell pepper, garlic, and onion into diced pieces. 
  3. Transfer them to a baking sheet and drizzle the olive oil. Add the thyme, salt, black pepper, ground ginger, crushed red pepper, and garlic.
  4. Move to the oven and bake for 40 minutes or until fully cooked.
  5. Drizzle the lemon juice on top and serve. Add this to your meal prep bowls and store it in the fridge for up to five days.
