Chia Pudding with Strawberry and Chocolate Chips

This Chia Pudding with Strawberry and chocolate chips takes 20 minutes to prep for a delicious breakfast or dessert. It is creamy, loaded with protein and fiber, and topped with fresh strawberries and dark chocolate chips.

Ingredients
  

  • 3 TBSP chia seeds
  • ¼ cup fresh strawberries
  • ½ cup yogurt (I used Greek yogurt, sub for vegan yogurt )
  • ½ TBSP vanilla extract
  • 2 TBSP Dark chocolate chips
  • 2 TBSP Almond milk
  • 1 cup water

Instructions
 

  • Bring water to a boil.
  • Add the chia seeds to a heat-proof bowl.
  • Pour the hot water over the chia seeds.
  • Let it sit for about 10 minutes and stir.
  • Add the yogurt, vanilla extract, and almond milk to the chia seeds and combine. Dice the strawberries and add them to the bowl with the chocolate chips, and enjoy! You can store this in the fridge for up to 5 days.
