Chicken Black Bean Lettuce Wraps with Avocado Sauce

These Chicken Black Bean Lettuce Wraps are colorful, flavorful, and delicious. They are topped with chicken breast, black beans, corn, veggies, and creamy avocado sauce. Lettuce wraps are a good alternative to tortillas. I discovered lettuce wraps last year and have been a fan ever since.

Ingredients
  

  • 1 LB chicken breast
  • 1 heart Romaine lettuce
  • ½ cup cherry tomatoes
  • ½ cup black beans (canned)
  • ½ cup corn (canned)
  • 3 TBSP avocado oil
  • 0.5 oz parsley
  • 1 TBSP smoked paprika
  • 1 tsp black pepper
  • ½ tsp ground cumin
  • ½ tsp chili powder
  • salt to taste
  • 3-4 TBSP green onions
  • ¼ cup avocado lime sauce (store-bought)

Instructions
 

  • Cut chicken breast into cube sizes and season with smoked paprika, salt, black pepper, ground cumin, and chili powder. Add 1 tbsp of avocado oil and combine with a spoon.
  • Heat avocado oil in a nonstick pan. Add the chicken breasts and cook for 15 minutes or until brown.
  • Drain and rinse the black beans and corn.
  • Cut the cherry tomatoes and green onions and finely chop the parsley.
  • Lay romaine lettuce on a large cutting board and add the cooked chicken breast, corn, black beans, cherry tomatoes, green onions, and parsley. Add the avocado sauce on top and enjoy!
