Greek Inspired Chicken Pasta Salad with Tzatziki Dressing

This Greek-inspired Chicken Pasta Salad with Tzatziki Dressing is colorful and delicious. It is also great for lunches during the week. My favorite part about making this salad is the creamy tzatziki dressing, which adds a fantastic flavor.

- 1.5 LBs chicken breast
- 1 ½ cup pasta (dry)
- 1 cup olives
- 1 ½ cup canned corn
- 1 cup cherry tomatoes
- 2 TBSP olive oil
- half an onion
- 1 red bell pepper
- 4 TBSP feta cheese
- 1 TBSP cajun seasoning
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp oregano
- salt to taste
Ingredients for dressing
- 8 TBSP tzatziki
- 4 TBSP plain yogurt
- 1 tsp garlic powder
- 1 tsp oregano
- 4 TBSP water
Cut the chicken breast into cubes. Season with 1 tbsp cajun seasoning, 1 tsp black pepper, 1 tsp oregano, 1 tsp garlic powder, and salt to taste.
Heat a nonstick pan with olive oil. Add the chicken breasts and cook for 12-15 minutes or until fully cooked.
Cook the pasta as instructed on the box.
Wash and cut the cherry tomatoes and bell pepper.
Dice the onion.
Make the salad dressing
In four mason jars, combine 2 tbsp tzatziki sauce, 1 tbsp yogurt, ½ tsp oregano, ½ tsp garlic powder, and 1 tbsp water in each jar.
Add the vegetables and chicken breast
In each jar, add ⅓ cup olives, ⅓ cup corn, ¼ cup cherry tomatoes, ¼ cup red bell pepper, 1 tbsp onion, ½ cup cooked chicken breast, ¾ cup cooked past, and 1 tbsp feta.
When ready to eat, add the mixture to a bowl, combine, and enjoy!
