Greek- inspired Sheet Pan Chicken, Zucchini, Carrots and Tomato

Try this Greek-inspired sheet Pan Chicken, Zucchini, Carrots, and Tomato recipe for a delicious and easy weeknight dinner. It is made on a single sheet pan and takes only 35 minutes to prepare.

- 1.5 LB chicken thighs
- 1 LB. carrots
- An orange bell pepper one
- Half an onion
- 1 cup cherry tomatoes
- Two medium Zucchini
- ¼ cup avocado oil sub for olive oil
- 1 TBSP thyme
- 2 TBSP oregano
- 1 TBSP black pepper
- Salt to taste
- 4 cloves garlic
- 1 TBSP Dijon mustard
- 1 cup feta cheese
- ¼ cup lemon juice
Preheat the oven to 400 degrees F.
Cut zucchini, bell pepper, carrots, and onion and transfer them with the chicken thighs to an 18 x 13 baking sheet.
Combine the avocado oil, minced garlic, oregano, thyme, black pepper, mustard, and lemon juice in a mixing cup, transfer it to the baking sheet, and stir.
Place the baking sheet in the oven and bake at 400 degrees F for 25-30 minutes.
Remove it from the oven, add the cherry tomatoes and feta cheese, and put it back in for another 7-10 minutes.
Allow to cool and transfer to meal prep bowls, or serve and enjoy.
