Ground Beef Kale, Potato, Corn Soup

This Ground Beef Vegetable Soup recipe is a very easy and delicious meal. The best part about making this is that everything is done in one pot.

Ingredients
  

  • 2 TBSP avocado oil (sub for olive oil)
  • Half an onion
  • 4 cloves garlic
  • 2 TBSP thyme
  • 1 TBSP Oregano
  • 1 tsp Cayenne pepper (optional)
  • 1 TBSP black pepper
  • Salt to taste
  • 2 cups ground beef
  • 1 cup diced tomatoes
  • 2 cups mixed vegetables
  • 2 cups diced potatoes
  • 2 TBSP Tomato paste
  • 4-5 cups beef broth
  • 4 bay leaves
  • 8 oz chopped kale

Instructions
 

  • Dice the onion and mince the garlic using a garlic press. Add the avocado oil to a pot and heat over medium heat; add the diced onion, minced garlic, thyme, salt, oregano, cayenne pepper, and black pepper and stir for 2 minutes. Transfer the ground beef to the pot and combine and cook for 5-7 minutes.
  • Add the diced tomatoes, mixed vegetables, potatoes, tomato pasta, beef broth, and bay leaves, combine, and cook for 10 minutes on medium heat.
  • Chop the kale, transfer it to the pot, and cook for another 5 minutes on low heat. Adjust seasonings to taste.
  • Transfer to meal prep bowls or serve and enjoy!
