Dice the onion and mince the garlic using a garlic press. Add the avocado oil to a pot and heat over medium heat; add the diced onion, minced garlic, thyme, salt, oregano, cayenne pepper, and black pepper and stir for 2 minutes. Transfer the ground beef to the pot and combine and cook for 5-7 minutes.
Add the diced tomatoes, mixed vegetables, potatoes, tomato pasta, beef broth, and bay leaves, combine, and cook for 10 minutes on medium heat.
Chop the kale, transfer it to the pot, and cook for another 5 minutes on low heat. Adjust seasonings to taste.
