The popular High-Protein bowl inspired this Sweet Potato, Cottage Cheese, Pickle, and Ground Beef Bowl. It is tasty, nutritious, and super quick to prepare. I have had it for dinner two days in a row.
Peel and chop sweet potatoes into cubes. Add the diced sweet potatoes to a sheet pan, season with garlic powder, oregano, and salt, and add 1 tbsp avocado oil. Combine with a spoon. Transfer the sheet pan to the oven and roast for 30 minutes or until fully roasted.
Chop the pickles and avocados.
In a medium bowl, add the roasted sweet potatoes, ground beef, diced pickles, avocado, and cottage cheese. Drizzle honey and hot sauce on top and enjoy!
