High-Protein Sweet Potato, Cottage Cheese, Pickle, Ground Beef Bowl

The popular High-Protein bowl inspired this Sweet Potato, Cottage Cheese, Pickle, and Ground Beef Bowl. It is tasty, nutritious, and super quick to prepare. I have had it for dinner two days in a row.

Ingredients
  

  • 1 LB. sweet potatoes
  • 2 cups ground beef
  • ½ cup cottage cheese
  • 2 medium avocados
  • 1-2 TBSP honey
  • 2 TBSP avocado oil (sub for olive oil)
  • ½ cup pickles
  • 1 TBSP hot sauce
  • ½ tsp garlic powder
  • ½ tsp oregano
  • salt to taste
  • 1 TBSP taco seasoning

Instructions
 

  • Preheat oven to 375 degrees F.
  • Peel and chop sweet potatoes into cubes. Add the diced sweet potatoes to a sheet pan, season with garlic powder, oregano, and salt, and add 1 tbsp avocado oil. Combine with a spoon. Transfer the sheet pan to the oven and roast for 30 minutes or until fully roasted.
  • Chop the pickles and avocados.
  • In a medium bowl, add the roasted sweet potatoes, ground beef, diced pickles, avocado, and cottage cheese. Drizzle honey and hot sauce on top and enjoy!
