Lemon steak, Potatoes, Cauliflower and Pepper Sheet Pan Dinner

- 1.5 LB. beef
- 1 LB. Potatoes
- 1 head cauliflower
- 1 cup diced bell pepper
- ½ cup diced onion
- ¼ cup olive oil
- ¼ cup lemon juice
- 3 TBSP minced garlic
- 2 TBSP ground ginger
- 2 TBSP black pepper
- 1 TBSP crushed red pepper
- 2 tsp thyme
- 1 tsp salt
Preheat the oven to 400F.
Prepare the ingredients by cutting the beef into thin cubes, the potatoes and cauliflower into bite-sized pieces, and the bell pepper, garlic, and onion into diced pieces.
Transfer them to a baking sheet and drizzle the olive oil. Add the thyme, salt, black pepper, ground ginger, crushed red pepper, and garlic.
Move to the oven and bake for 40 minutes or until fully cooked.
Drizzle the lemon juice on top and serve. Add this to your meal prep bowls and store it in the fridge for up to five days.
