Mexican-Inspired Shrimp Salad with Lime Chipotle Dressing

This Mexican-inspired shrimp salad with lime chipotle dressing features simple ingredients like black beans, corn, tomatoes, and lettuce and is loaded with flavors. It is a perfect meal-prep lunch that can be made in just 25 minutes.

- 2 lbs shrimp
- 2 cups black beans
- 1 cup corn
- 1 cup cheese (Mexican style)
- 8 oz Romaine lettuce
- 1 ½ cup cherry tomatoes
- 2-3 Jalapeños
- ½ cup onion
- 2 TBSP avocado oil (sub for olive oil)
- 1 TBSP chipotle seasoning
- 1 tsp cumin
- 1 tsp black pepper
- salt to taste
Ingredients for dressing
- 4 TBSP avocado oil (olive oil)
- 0.5 oz cilantro
- 4 tsp chipotle seasoning
- 2 tsp cumin
- ½ cup lime juice
- salt to taste
Season the shrimp with chipotle seasonings, cumin, black pepper, and salt. Heat a non-stick pan with avocado oil, add the shrimp, and cook for 3-5 minutes on each side or until fully cooked.
Wash and cut the cherry tomatoes, onions, jalapeños. Finely chopped the cilantro.
Make the salad dressing
In four 32-oz mason jars, add 1 tbsp avocado oil, 1 tbsp cilantro, 1 tsp chipotle seasoning, ½ tsp cumin, 2-3 tbsp lime juice, and salt to taste to each jar and combine with at the bottom of the jars.
Add Other Ingredients
Add ½ cup black beans, ¼ cup cherry tomatoes, ¼ cup corn, 1-2 tbsp onion, 2 tbsp cheese, ½ cup cooked shrimp, 1 tbsp jalapeño, and 1 cup Romaine lettuce to each jar.
When ready to eat, add one jar of mixture to a bowl, combine, and enjoy!
This salad stays fresh for 3-4 days in the refrigerator.
